Get the taste of the Scandinavian highland culture!

Good food doesn’t have to fly half-way around the planet – let us instead introduce you to the food culture of the Scandinavian highlands. Up here we always remained connected to the nature around us, which is filled with tasty treasures.
And we are looking forward to teaching you how to cook and preserve them!

People once lived in these areas all year round without having a food store anywhere near.
This was not so long ago. A cow, a couple of goats, sheep and some hens were enough – the rest came from the wild nature.

Depending on what time of the year you will join our artisanal food adventure week, you will get to experience the following adventures.

Cooking classes for traditionally Scandinavian dishes

Our chefs will introduce you to the taste of artisanal food such as handmade bread and jam as well as delicacies from the wild like reindeer, moose and different kinds of fish.

Cooking outdoors in the wild

Nature around us offers many edible plants and vitamin-rich berries. We will make them become part of a genuine highland outdoor menu. The dishes may vary, since not everything grows at any time, due to the short summer.

Eat with the Sami

We will visit the camp of the native inhabitants of northern Scandinavia and enjoy their traditional dishes.

“Osttillverkning”

A lot of expertise and passion is needed to produce a cheese – and you can taste this in the result! Come and learn about our regional cheese and cream manufacturers.

“Fäbodliv”

Visit the traditionally Swedish summer farms for animals, such as cows. We will tell you how farm life used to be in the old days and what it is like today. You will also get to learn about our traditional flat bread.

Berry picking

Join our outdoor tours in July, August, September with experienced guides that will teach you how to preserve and save the different kinds of berries.

Mushroom picking

Follow along an experienced guide in August or September to learn where to find mushrooms, which ones are edible and how to handle them in the best way.

An important part of thriving in the wild is being able to find and prepare food straight from the nature to your plate. Catching fish, hunting mammals and foraging everything from greens to nuts and mushrooms are some of the most fulfilling ways of getting in touch with nature. We will teach you how to find, cook and enjoy your food and we will also help you picking natural flavourings, keeping leftovers safe from predators and making your own kitchen must-haves out of natural matetials.

Some of the self-made food is, by the way, meant to be taken home so that you can remember and enjoy the taste of this wonderful week for a bit longer.

While you are on the hunt for berries and mushrooms up in the “fjäll” (highlands) or simply take a hike through the forests you may spot wild animals such as reindeers, foxes and birds and enjoy the unique flora of the area. We will also invite you for an overnight stay in the wild outdoors if you like and may take you to a visit at the nearby musk park.
You may even take a trip over the Norwegian border to visit Røros and get the taste of our neighbouring country.

Have your camera prepared and with you at all times in order to collect all these unique moments. Let us know whether you are interested in having an individually printed item, maybe a piece of wood, as we have the opportunity to use a professional printing machine.

Accomodation

You will stay at the wonderful Skarvruet Highland Hotel with its vintage wilderness ambience, where the cooking classes will take place, too. During the evenings of your tasty food adventure week, you are welcome to warm up in the panorama sauna or the hot tubs and enjoy three-course dinners at the restaurant.
